Some favorites to remember and share!



SNACK BALLS

(I usually quadruple this recipe...)
Combine:

  • 1.5 C oats
  • 1.5 C crispy rice cereal (I use Rice Krispies or crunched up Chex)
  • 1/2 C shredded coconut
  • 1/4 C chia seeds
  • 1/4 C flax seed meal
  • Chocolate chips (handfuls)
In another bowl combine:
  • 1/4 C honey
  • 1/4 C coconut oil
  • 1/2 C peanut butter (or another nut butter)
Add wet ingredients to dry ingredients.
Refrigerate for at least a half hour to make them easier to handle.
Form into balls.
Freeze.
Hide them underneath the freezer burned veggies that no one's ever going to eat. :)




CORN SUCCOTASH (from Grammy)

  • 1 can black beans
  • 2-4 cobs of fresh corn, cooked (I always do 4!)(or 1 can, drained)
  • 1-2 tomatoes
  • red onion
  • cilantro
  • 1-2 tsp cumin
  • 1-2 TBSP oil
  • fresh lime juice
  • salt
*eat w/ corn or tortilla chips!
