Some favorites to remember and share!
SNACK BALLS
(I usually quadruple this recipe...)Combine:
- 1.5 C oats
- 1.5 C crispy rice cereal (I use Rice Krispies or crunched up Chex)
- 1/2 C shredded coconut
- 1/4 C chia seeds
- 1/4 C flax seed meal
- Chocolate chips (handfuls)
- 1/4 C honey
- 1/4 C coconut oil
- 1/2 C peanut butter (or another nut butter)
Refrigerate for at least a half hour to make them easier to handle.
Form into balls.
Freeze. Hide them underneath the freezer burned veggies that no one's ever going to eat. :)
CORN SUCCOTASH (from Grammy)
- 1 can black beans
- 2-4 cobs of fresh corn, cooked (I always do 4!)(or 1 can, drained)
- 1-2 tomatoes
- red onion
- cilantro
- 1-2 tsp cumin
- 1-2 TBSP oil
- fresh lime juice
- salt
*eat w/ corn or tortilla chips!
